Quinoa
This organic white quinoa is naturally gluten-free, high in protein, and one of the few plant foods that contain all nine essential amino acids. It is also high in fiber, magnesium, B-vitamins, iron, potassium, calcium, phosphorus, vitamin E, and various beneficial antioxidants.
Quinoa is very quick and easy to cook! For best results, start by rinsing the quinoa. (This reduces the bitter taste that comes with its natural coating.) Then simply combine it in a pot with water at about a 2:1 (water to quinoa) ratio. (Some people reduce the water to 1.5 or 1.75 cups per 1 cup of quinoa. You can experiment to find your sweet spot.)
Bring the pot to a boil, cover, and reduce the heat. Simmer for 15 minutes. Remove the pot from the heat and let it sit, covered, for another 10 minutes. Then fluff the quinoa with a fork, and it's ready to go!
Use quinoa as you would rice or similar grains. It's great in salads, with meat and veggies, in casseroles, at breakfast...the options are endless!
