Late Summer Quinoa Salad

As of today, it's technically fall, but we've got just the stuff to make yourself a perfect late-summer quinoa salad! Cook up a small batch of quinoa and add tomatoes, peppers, cucumbers, and onion. From there, you can lean into any flavor profile, but you don't have to make it complicated. Parsley or cilantro, lemon or lime juice, and honey (hot or regular) with olive oil are great, simple ways to dress it up. Garlic, salt, and pepper will tie it together. Dried cranberries, roasted almonds, chickpeas, and feta cheese all make good mix-ins. You can find lots of recipes online, but here are a few to use as inspriation...or just do an image search and see what makes you hungry!
