
Summertime Tomato & Basil Sauce
Mere hours after leaving the shop on Friday, one of our customers sent us this picture of the tomato and basil pasta sauce she made with almost all Full Circle ingredients! We could practically smell the warm garlic and tangy tomato wafting out of the picture, so we just had to get the recipe! Turns out, this simple summery sauce is a staple in her home. She got the recipe from her mom (also a Full Circle customer), and it's one of her daughter's favorite things to eat!
So, courtesy of Janice, Samantha, and Katharine, here's a three-generation-approved dinner you can get on the table within an hour of coming home, made with pantry staples and veggies that are currently (in August) in season!
Summertime Tomato & Basil Sauce
Ingredients
- 1/4 cup olive oil
- 2 T butter
- 3 cloves garlic (chopped fine)
- 5-6 tomatoes (diced or chopped finely with a food processor)
- 1 large handful fresh basil (torn into small pieces)
- 1 tsp. thyme
- 1 tsp. sugar (optional)
Instructions
Heat oil and butter on medium low heat. Sauté garlic for 2-3 minutes. Add tomatoes and simmer for 15-20 minutes. Add thyme and (optional) sugar. Toward the end of the cooking process, add the fesh basil (finely chopped or torn).
Trick: To speed up the process, put the basil and tomatoes together in the food processor. Works like a charm! If you prefer a fresher basil taste, wait and add it at the end.
Serve with your favorite pasta, protein, and veggies, and top with freshly grated Parmesan cheese! (Full Circle Note: Try some grated Skyview Prairie or Fairmount cheese instead, and let us know what you think!)
