Pie Pumpkins: Not Just for Pie!

Pumpkin gets a lot of attention in the fall, but it must still feel overlooked and misunderstood. At Halloween, we carve it up. In desserts and drinks, we cover it with cinnamon, nutmeg, cream, and sugar. 

But pumpkin is so much more than that! 

Roasted and pureed, the creamy texture is perfect for a wide variety of dishes, savory as well as sweet. We love it in soups, stews, chilis, and curries (look to African, Asian, and South American recipes for inspiration). It has a subtle flavor that can blend easily into dips (it's surprisingly good in spinach artichoke dip), risotto, or pasta sauces (think delightful, fiber-ful alfredo). You can hollow it out, fill it with stuffing ingredients and protein, and roast it up for a really fun main dish or side. And when it comes to pumpkin desserts, that creamy texture is the perfect base for chocolate mousse, moist brownies, or any number of other treats that don't taste like what you might think of when you think of pumpkin.
