Radish Pickles
This delicious recipe comes from our friends at Limestone Gardens using one of our favorites, watermelon radishes!
Great for radish beginners or veterans, watermelon radishes are mild and a bit sweet. Popping with flavor and color, they're a great addition to salads and stir-fry – or as pickles for tacos and sandwiches! Other types of radishes work great as well.
Packing Pickles-
- Cut 1 small onion, 2 cloves of garlic, and enough radishes into slices to fill a pint mason jar (or use a food processor to make quick work of them like Victor and Erica at Limestone)
- Bring 1/2 cup water and 1/2 cup apple cider vinegar to a boil
- Place onions, garlic, and radishes in a pint mason jar and cover with liquid mixture and then refrigerate
