Stone & Sparrow
Locally grown and milled flour from Stone & Sparrow Farm and Mill in Melvern, Kansas. Comes in a half-gallon reusable, exchangable glass jar that holds 44 oz. (2.75 lbs.) of wheat flour or 38 oz. (2.38 lbs.) of rye flour.
The farmers at Stone & Sparrow Farm and Mill are true stewards of the land, seeking above all to improve the soil health of the land they farm. They do this with a heavy cover crop rotation and a deep understanding of soil biology and ways to create a healthy microbiome.
The growing process is thoughtful as well. The grain varieties they choose have been selected for flavor rather than high yield and disease resistance as is common with commodity crops. They do not use chemical pesticides or herbicides, and they sift off only the largest pieces of bran, leaving most of the protein, fiber, and flavor.
All Purpose Flour: The name says it all! Use this wheat flour in baked goods of all varieties.
Bread Flour: With a higher protein and gluten content, this wheat bread flour produces a chewier texture and stretchier dough that is ideal for products that rise.
Turkey Red Wheat Flour: This flour, brought to Kansas by German Mennonites from Ukraine in the late 1800s, makes a great rustic loaf. Mixes well with soft white winter wheat in a softer bread recipe.
Soft White Winter Wheat Flour: This is the flour to use for biscuits that melt in your mouth or light and fluffy cakes and pastries. Lower in gluten and protein with a rich flavor.
Rye Flour: Rye is great for hearty breads and pizza crusts, and the beneficial microbes that live on the brain make it perfect for feeding your sourdough starter. Rye flour pairs surprisingly well with chocolate, so don't hesitate to use it in cookies and brownies as well! The farmers at Stone & Sparrow love rye because it grows where wheat does not and thus takes fewer inputs.
