Use this Kernza® flour in baked goods, particularly scones, pancakes, quick breads, and other recipes where you would use whole grain flour. You can substitute it 1:1 for wheat flour but may need to add more water to the recipe. See this website and this blog post for resources on cooking with Kernza®. About Kernza®

Kernza®  perennial grain is a cousin of wheat that was developed by The Land Institute in Salina. Because it lives for years, it grows enormous roots that help to stop erosion, trap carbon, and prevent runoff. The grain we carry is grown on family farms in Kansas and Nebraska. It is non-GMO, regeneratively grown, and pesticide free.
