One block (8 oz.) of aged raw milk cheddar cheese from Jason Wiebe Dairy. This white cheddar is aged up to 18 months, giving it an intense, addictive flavor. This unique cheese is somewhat crumbly and slightly sweet, with an almost citrus-like note. You will notice that this cheese contains tyrosine crystals—a highly sought-after byproduct of certain aged cheeses formed by the calcium in the milk. Cottonwood River Reserve is Wiebe's signature cheese and has been a crowd favorite for over 15 years.
Wiebe cheese is made right on the farm from the milk of their herd of ~120 dairy cows in Durham, Kansas.
